Japanese Knife Rust in Singapore: A Practical Guide
The joy of owning a quality Japanese knife is easily tarnished by the first spots of orange on the blade. In Singapore's humidity that's a common sight, but it is not inevitable.
Whether it happens comes down to two things: the steel your knife is made from, and what you do in the minute after you finish cooking. This guide covers why rust forms, how to prevent it, and how to deal with it when it appears.
Steel needs a film of moisture on its surface before corrosion can begin, and that film starts forming at around 60% relative humidity. Singapore's annual mean is roughly 84%, our driest month averages 83%, and daily peaks reach 95%. In practical terms, the conditions that allow rust are present here all year round.

However, plenty of Japanese knives live long, spotless lives in Singapore kitchens, including full carbon ones in professional kitchens across the island. What the climate removes is your margin for error. In Vancouver or Osaka, a blade left damp overnight in a dry winter might be fine. Here, the same lapse on the same knife may not be.
So the question isn't whether Japanese knives can survive Singapore. It's which steel you choose, and what you do after you finish cooking. This guide covers both, plus what to do if rust does appear.
Know your steel
Rust resistance varies enormously between Japanese knife steels, far more than most buyers realise. Two knives at the same price can sit at opposite ends of the scale. Before anything else, work out which family yours belongs to.
Carbon steels
Examples: White Steel (Shirogami) #1, #2, #3; Blue Steel (Aogami) #1, #2; Aogami Super Chromium content: negligible Rust resistance: low
These are the traditional steels of Japanese blacksmithing, and they're what most people mean by "a proper Japanese knife." They take the keenest edge available, sharpen quickly and easily on a whetstone, and respond beautifully to skilled maintenance. Blue steel adds tungsten and chromium for better edge retention; white steel is the purer, more responsive option that many sharpeners prefer.
They are also genuinely reactive. Leave one wet for twenty minutes and you may see orange spotting. Cut lemons and leave the residue on, and you'll see it faster.
In Singapore: entirely viable, and many local professionals use nothing else — but only with a reliable daily routine. Choose carbon because you want the edge and enjoy the ritual, not because it sounds more authentic.
Stainless steels
Examples: Ginsan (Ginsanko / Silver 3), VG-10, VG-5, AUS-10 Chromium content: roughly 13–16% Rust resistance: high
Enough chromium to form a passive oxide layer that self-repairs and shields the steel. These are conventionally melted steels, not powdered, which keeps them relatively easy to sharpen.
Ginsan deserves special mention for this climate. It's a stainless steel that behaves on the stone much like white steel — it sharpens easily, takes a fine edge, and feels like carbon steel to maintain. For a Singapore cook who wants traditional performance without daily anxiety, it's often the single best answer we give in the shop.
VG-10 is the workhorse of the category: widely available, excellent all-round performance, holds an edge well. It can be slightly prone to microchipping if treated roughly.
Powdered (PM) steels
Examples: SG2 / R2, ZDP-189, SRS-13 Chromium content: roughly 15–20% Rust resistance: high, with one caveat
Made by powder metallurgy rather than conventional melting, which produces an extremely fine, uniform carbide structure. The result is exceptional edge retention — noticeably longer than conventional stainless — combined with strong corrosion resistance.
The trade-off is sharpening. Those hard carbides resist abrasion, so powdered steels take longer to sharpen and often want diamond or ceramic stones rather than standard water stones. They're less forgiving of amateur technique, which is one reason owners tend to bring them to us rather than do it at home.
The caveat on ZDP-189. On paper it has around 20% chromium, which sounds bulletproof. In practice a large share of that chromium is locked up in carbides rather than available to form the protective layer, so ZDP-189 is meaningfully less corrosion-resistant than its chromium figure suggests. It's a superb steel with extraordinary hardness — just don't treat it as maintenance-free.
Clad construction (san mai) — not a steel, but strong deciding factor
This is where most confusion lives. Many Japanese knives are laminated: a hard core steel sandwiched between softer outer layers. The cladding determines which parts of the blade are exposed.

Stainless-clad carbon. A reactive carbon core with stainless outer layers. Only the exposed cutting edge and tip can rust; the flats look after themselves. Very common in the mid-range, and often mistaken for a stainless knife. It is not one.
Iron-clad (including kurouchi, the black forged finish). Soft iron cladding over a carbon core. The entire blade is reactive. These will patina and can rust across the whole surface.
Monosteel. A single steel throughout — behaves exactly as its steel family suggests.
How to tell: look for a visible line, often wavy or misty, running along the blade face above the edge. That's a lamination line, and it means you own a clad knife.

So what should you buy in Singapore?
If you cook daily and enjoy the craft: carbon steel, and build the routine below into muscle memory. The edge is worth it.
If you want traditional feel without the vigilance: Ginsan. It's the recommendation we make most often here, and for good reason.
If you cook a few times a week and would rather not think about it: VG-10 or SG2. Wipe, wash, dry, done.

Preventing rust
The whole discipline takes about a minute. It just has to happen every time.
The routine
1. Wipe during prep, not only after. Breaking down a fish or working through a kilo of tomatoes? Wipe every few minutes. Acid in prolonged contact causes pitting, and pitting is permanent.
2. Never let the knife sit in the sink. Not "for a minute," not "until the rice is done." Wet steel plus standing water plus 85% humidity is the fastest route to spotting on a reactive blade.
3. Wash by hand, immediately, with mild detergent and warm water. Never a dishwasher. The heat, the harsh detergent salts and the long wet cycle will damage the edge, the finish and a wooden handle in a single run — on stainless as well as carbon.
4. Dry completely, then leave it out a few minutes. Towel it, then let residual moisture evaporate before it goes away. Pay attention to the join between blade and handle: water wicks in there, sits out of sight, and rusts the tang. This is the most common cause of the "it rusted and I don't know why" conversation in our shop.
5. Oil anything reactive. A few drops of camellia oil (tsubaki), spread thin with a paper towel. After every wash for full carbon; every few days for stainless-clad carbon; always before storing any reactive blade for more than 48 hours. Food-grade mineral oil is a fine substitute. Never cooking oils — olive, vegetable and sesame all turn rancid and sticky.
Stainless and powdered steels don't need routine oiling, but they do need steps 1 to 4. "Stainless" means stain-less, not stain-proof, and we see pitted VG-10 regularly.
Storage matters more than technique
Your knife is in use for perhaps twenty minutes a day and in storage for twenty-three hours.
The wooden knife block is the worst common option. It holds a dark, unventilated, often damp slot against your blade for hours, and you can't see what's happening inside. In this climate we'd suggest not using one at all.
The kitchen drawer is close behind. No airflow, plus contact damage against everything else in there.
A magnetic rack in a ventilated spot is best. Air on both faces, visible at a glance, no edge contact. Keep it away from the hob — repeated heat and steam cycling brings its own problems.
A saya (wooden sheath) is excellent for transport and risky for storage. Never sheathe a blade that isn't bone dry. A saya on a damp knife is a humidity chamber.
For valuable pieces used rarely — a honyaki, an engraved yanagiba, a collector's knife — oil properly, wrap in anti-tarnish paper, and store with a silica gel pack. Dry or replace the silica every few months.
Local conditions worth knowing
Wet market seafood. Salt water is far more corrosive than fresh. Wipe more often and wash the moment you're done.
Unventilated HDB and condo kitchens. Many sit above ambient humidity after cooking. Running the extractor for ten minutes afterwards does more for your knives than any oil.
Long trips away. A fortnight in an empty, un-aircon flat during the monsoon is the highest-risk period a knife will face. Oil and wrap before you fly.
Air-conditioning is quietly your ally. An aircon'd room sits well below ambient humidity. If you have a choice of where to mount that magnetic rack, choose the room that gets cooled.
Dealing with rust when it appears
First, confirm it's actually rust
A great many healthy knives get scrubbed back to bare steel by owners who mistook patina for damage.
Patina is a stable oxide layer that forms as the blade meets acidic ingredients. It begins blotchy blue-grey, sometimes with purple or bronze tints, and matures over a few weeks of use into an even charcoal grey. It's smooth to the touch and doesn't transfer to a cloth. It's protective — a developed patina slows further corrosion, which is why Japanese chefs cultivate it deliberately.
Rust is orange to red-brown, textured or slightly powdery, and sits proud of the surface. Press a white paper towel firmly along it: a rust-coloured smear means active corrosion that will keep eating into the steel until stopped.

The test in one line: grey and smooth is your friend, orange and rough is your enemy.
Pro note: Forcing a patina on a new carbon blade — cutting an onion, or wiping the flats with hot mustard or lemon on day one — buys real protection during week one, which is exactly when new owners get caught out. It looks patchy for a fortnight, then settles into something rather beautiful.
Then treat it by severity
Light surface spots. A wine cork or a rust eraser with a little water, working along the length of the blade rather than across it. Wash, dry thoroughly, oil. A fine whetstone will also lift light rust near the edge during normal sharpening.
Stubborn spots. A fine rust eraser, or a light pass on a 1000-grit stone. Take your time — aggressive abrasives leave scratches deeper than the rust you're removing. Never steel wool.
Pitting. Small craters remaining after the orange is gone means permanent loss of steel. It can be polished to look better but not undone. Pitting on the edge itself needs proper thinning or edge restoration, not a home fix.
Rust at the handle join, or a loose or swollen handle. Stop, and bring it in. Water has reached the tang, and DIY attempts usually make it worse. This is a rehandling job.
Rust on a powdered steel. Don't attempt this at home. These steels are hard enough that ordinary abrasives struggle, and it's easy to damage the finish while achieving nothing.

Frequently asked questions
Can I own a carbon steel knife in Singapore? Yes. Many professional kitchens here run White and Blue steel exclusively. The honest question is behavioural rather than technical: will you wipe and dry it every single time? If yes, carbon rewards you with a keener, more easily restored edge. If you're unsure, Ginsan gives you much of the sharpening feel with far more forgiveness.
What's the difference between stainless and powdered steel for rust? Both resist rust well. Powdered steels hold an edge considerably longer but are harder to sharpen, and ZDP-189 is somewhat less corrosion-resistant than its chromium content implies. For most home cooks, conventional stainless is the more practical choice.
How often should I oil a carbon steel knife? Full carbon: after every wash. Stainless-clad carbon: every few days with regular use. Any reactive blade stored more than 48 hours: always oil first.
Is it normal for a new carbon knife to discolour within days? Yes. Grey and blue-grey discolouration is patina forming, and it's a good sign. Orange-brown spots are not — address those immediately.
Will a dishwasher really damage a Japanese knife? Yes, and fast. High heat, aggressive detergent salts and a long wet cycle dull the edge, corrode the steel and swell or dry out a wooden handle. One cycle does visible harm.
How often should I have knives professionally sharpened in Singapore? For a home cook, once or twice a year alongside regular honing. For a professional working daily, every few weeks.
